Since the vegetarian food should still be nutritious and filling, you need to master certain cooking skills. Here also come our simple and very delicious recipes for you.
Stuffed avocado with chickpeas and tahini
Ingredients for 2 servings: 1x ripe avocado or eggplant, olive oil, salt, 1 tablespoon sesame paste, 1/2 half a cup of canned chickpeas, tomatoes and parsley for garnish
Preparation: Halve the aubergine, sprinkle with salt and let stand for a few minutes. Dab off any liquid and grill the aubergine evenly on the wire rack. In the meantime, mix the tahini, lemon, salt and pre-pepper together. Fill the grilled vegetables with the paste and place some chickpeas on top. A few drops of lemon juice, salt, pre-pepper, parsley and tomato slices – et Voila!
Halloumi potato skewers
ingredients: 300g Halloumi cheese, 2x potatoes, olive oil, salt, turmeric, 1 pinch of pepper
preparation: Boil the potatoes until they are half firm, peel them and cut into cubes together with the cheese. Skewer the potato cheese cubes, brush with the oil, season with salt and place on the grill.
Watermelon covered with creamy feta and thyme
ingredients: 1x ripe watermelon, goat cheese, 1x bush savory, salt, pepper
preparation: Grill the melon on the edge of the grill carefully and not for too long. Then set up a plate with goat cheese and grilled melon. Garnish with savory and sesame oil.
