Wash the strawberries in a colander, dab carefully and dry with a kitchen towel. Remove the leaves and cut off any soft or brown areas. Halve or quarter the strawberries, depending on their size.

In a large bowl, layer the strawberries and preserving sugar alternately and add the lemon juice. Cover with a lid or cling film and place in the refrigerator for several hours or overnight. This will help dissolve the sugar and enhance the flavor of the fruit.

If you’d rather cook the jam right away, put the strawberries and lemon juice in a saucepan and cook over medium-high heat for 2 to 3 minutes until the strawberries start to crumble. Then add the sugar and proceed as described in the next few steps.

Place a few teaspoons and saucers in the freezer. You will need this later to check the freezing point of the jam.

Rinse the glasses and lids well in soapy water and place on a baking sheet to dry. Then sterilize in the oven at 100 ° C for 15 minutes.

Pour the strawberry and sugar mixture into a saucepan and bring to a boil. As soon as the jam starts to bubble, cook it for 4 to 5 minutes, stirring constantly, or according to the manufacturer of the preserving sugar. If sugar remains on the edge of the pot, brush it back with a wet pastry brush.

Tip: Wear oven gloves to protect your hand from hot steam and splashes.
